Nose to Tail Series

Join us for our first ever Nose to Tail event. On Wednesday 11 and Thursday 12 March we’ll be celebrating every part of our favourite fish by taking you on a six-course journey across the tunaverse. Our locally sourced, sustainable albacore tuna caught by our friends at Awatoru Wild Food will be the star of the show. Each course will be crafted from different parts of a single fish to showcase how varied, versatile and delicious this delicacy of the ocean can be.

Top loin tuna tataki
with freshly picked plums, umeboshi, lemon oil & watermelon radish

Head & collar tuna terrine
with whole grain mustard, home grown pickles & crispy tuna skin chips

Roast tuna bone marrow
with smoked date butter, hot pepper muhammara sauce & turkish bazlama buns

Charcoal grilled tuna belly
with shiso ponzu, bone broth & broad bean dumplings

Mid-loin tuna fillet
wrapped with spinach & mushroom, baked in puff pastry & served with smoked heart XO sauce

Dark chocolate marquise
with palm sugar cured tuna forequarter, ginger & foraged blackberries
